  • 6 pieces medium ripe tomatoes
  • 2 tablespoons unsalted butter

  • 1 cup breadcrumbs
  • 2 tablespoons heavy cream
  • 1 cup grated Parmesan cheese
  • 2 teaspoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Wash the tomatoes and slice off the tops. Using a spoon, gently scoop out the insides to hollow them, being careful not to puncture the skin. Set the hollowed-out tomatoes aside, and discard or save the pulp for another use.

Heat a skillet over medium heat, and melt the butter. Add the finely chopped shallots and sauté for 2 minutes until fragrant.

Add the chopped mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms are softened and any released liquid has evaporated.
