Ingredients

  • 4 pieces Tilapia fillets
  • 2 cups Cherry tomatoes
  • 0.5 cups Walnuts
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with a small amount of olive oil.

Step 2

Rinse the cherry tomatoes and slice them in half. Finely chop the garlic cloves and parsley. Coarsely chop the walnuts.

Step 3

In a medium-sized bowl, combine the cherry tomatoes, walnuts, garlic, 1 tablespoon of olive oil, lemon juice, parsley, salt, and black pepper. Mix well and set aside.

Step 4

Pat the tilapia fillets dry with a paper towel and place them in the prepared baking dish in a single layer.

Spread the tomato and walnut mixture evenly over the top of each tilapia fillet.

Drizzle the remaining tablespoon of olive oil over the fillets and cover the baking dish with aluminum foil.
