Ingredients

  • 1 cup Extra-firm tofu
  • 28 oz Diced tomatoes (no salt added, canned)
  • 2 cups Vegetable broth (low sodium)
  • 1 cup Unsweetened almond milk
  • 1 medium Onion
  • 3 Garlic cloves
  • 1 teaspoon Olive oil
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Chop the onion into small pieces and mince the garlic cloves.

Step 2

Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté for 5 minutes, or until the onion becomes translucent.

Step 3

Add the dried basil, oregano, smoked paprika, salt, and ground black pepper to the pot. Stir and let cook for 1 minute to release the spices' flavors.

Pour in the diced tomatoes (with their juice) and the vegetable broth. Stir to combine and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let cook for 10 minutes.
