Ingredients

  • 4 pieces Red bell peppers
  • 2 tablespoons Olive oil
  • 1 medium (diced) Yellow onion
  • 3 cloves (minced) Garlic
  • 2 large (diced) Tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Cooked rice or quinoa
  • 1 teaspoon Italian seasoning
  • 2 tablespoons (chopped) Fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup (optional) Shredded mozzarella cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the red bell peppers and remove the seeds and membranes. Set the peppers upright in a baking dish.

Step 3

Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
