  • 2 medium Carrots, peeled and diced

  • 28 ounces Crushed tomatoes (canned)
  • 4 cups Chicken broth
  • 15 ounces White beans (canned, drained and rinsed)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 cup Fresh parsley, chopped (optional garnish)
  • 0.25 cup Parmesan cheese, grated (optional garnish)

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Cook the bacon slices until crispy, about 6-8 minutes. Remove bacon from the pot and set aside, leaving the rendered fat in the pot.

In the same pot, add the diced onion and cook, stirring occasionally, until softened, about 5 minutes.

Add the minced garlic, diced carrots, and chopped rosemary to the pot. Cook for an additional 2-3 minutes, stirring frequently, until fragrant.
