Ingredients

  • 12 oz Fettuccine
  • 2 tbsp Olive oil
  • 3 tbsp Unsalted butter
  • 1 lb Large shrimp, peeled and deveined
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 cloves Minced garlic
  • 1.5 cups Cherry tomatoes, halved
  • 0.5 cup White wine
  • 2 tbsp Fresh lemon juice
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 3 tbsp Fresh parsley, chopped
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat until melted.

Step 3

Season the shrimp with salt and black pepper, then add them to the skillet in a single layer. Cook for 2 minutes per side, or until they turn pink and opaque. Remove the shrimp and set aside.

Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.
