Ingredients

  • 500 g Cherry tomatoes (mixed colors if possible)
  • 1 medium Cucumber
  • 1 small Red onion
  • 200 g Feta cheese block
  • 50 g All-purpose flour
  • 1 large Egg
  • 100 g Panko breadcrumbs
  • 3 tbsp Extra virgin olive oil
  • 250 ml Vegetable oil (for frying)
  • 10 g Fresh basil leaves
  • 5 g Fresh parsley (optional)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Lemon juice
  • 1 tsp Lemon zest

Directions

Step 1

1. Wash and halve the cherry tomatoes. Peel and dice the cucumber into bite-sized pieces. Thinly slice the red onion. Combine all in a large mixing bowl.

2. Add the olive oil, lemon juice, lemon zest, salt, and pepper to the vegetables. Toss well to combine and set aside to marinate.
