Ingredients

  • 6 large eggs
  • 0.25 cup whole milk
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh basil leaves, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium bowl, whisk together the eggs, milk, grated parmesan cheese, salt, and black pepper. Set aside.

Step 3

Heat the olive oil in an oven-safe, non-stick skillet over medium heat.

Step 4

Add the sliced onion to the skillet and cook, stirring occasionally, until softened and caramelized, about 5-7 minutes.

Step 5

Stir in the cherry tomatoes and cook for another 2 minutes until they begin to soften.

Step 6

Evenly spread the onion and tomato mixture across the skillet and pour the egg mixture over the top. Use a spatula to gently distribute the ingredients if needed.

Step 7

Lower the heat to medium-low and cook the frittata on the stovetop for 2-3 minutes, letting the edges start to set.

Step 8

Carefully transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is puffed and the center is set.

Step 9

Remove from the oven and let it cool for a couple of minutes. Garnish with chopped fresh basil.

Step 10

Slice into wedges and serve warm or at room temperature.
