Ingredients

  • 2 slices Ciabatta bread or focaccia
  • 2 slices Fresh mozzarella
  • 4 slices Tomato
  • 2 tablespoons Pesto sauce
  • 1 tablespoon Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 2 leaves Basil leaves (optional)

Directions

Step 1

Preheat a panini press or grill pan over medium heat.

Step 2

Spread 1 tablespoon of pesto sauce on one side of each slice of ciabatta or focaccia bread.

Step 3

Layer 2 slices of fresh mozzarella onto the pesto-covered side of one bread slice.

Step 4

Top the mozzarella with 4 slices of fresh tomato, slightly overlapping each slice.

Step 5

Season the tomato with a pinch of salt and black pepper. Add fresh basil leaves on top if using.

Place the second bread slice on top, pesto side down, to form a sandwich.

Step 7

Brush the outer sides of the sandwich with olive oil to ensure even toasting and crispiness.

Place the sandwich onto the preheated panini press or grill pan. Close the press or use a heavy skillet to weigh down the sandwich if using a grill pan.
