Ingredients

  • 6 large eggs
  • 3 tablespoons heavy cream
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 0.25 cup fresh basil leaves
  • 0.5 cup parmesan cheese, grated
  • 0.5 small yellow onion, finely diced

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined. Set aside.

Step 3

Heat the olive oil and butter in an ovenproof skillet over medium heat.

Step 4

Add the diced onion and sauté for 2-3 minutes until translucent.

Step 5

Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid burning.

Step 6

Toss in the cherry tomatoes and cook for 4-5 minutes until they start to soften and release their juices.

Step 7

Reduce the heat to low and pour the egg mixture over the vegetables. Gently stir to distribute the ingredients evenly.

Step 8

Sprinkle the grated parmesan cheese on top, followed by the fresh basil leaves.

Step 9

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set and the top is lightly golden.

Step 10

Remove from the oven and let cool for 5 minutes before slicing. Serve warm.
