Ingredients

  • 4 pieces Large ripe tomatoes
  • 4 pieces Garlic cloves
  • 2 pieces Green chilies
  • 1 medium-sized, finely chopped Red onion
  • 2 tablespoons, chopped Fresh coriander leaves
  • 1 tablespoon Mustard oil
  • 1 teaspoon (or to taste) Salt

Directions

Step 1

Wash the tomatoes and pat them dry. Leave the stem caps on for a smoky flavor while roasting.

Step 2

On an open flame or stovetop grill, roast the tomatoes, garlic, and green chilies until the skins are charred and blistered. This should take 10-12 minutes, turning occasionally for even charring.

Step 3

Once roasted, transfer the tomatoes, garlic, and green chilies to a bowl. Cover and let them cool for 5 minutes. This helps loosen the skin from the tomatoes.

Step 4

Peel off the charred skin from the tomatoes and garlic. Discard the skins but retain the juices that have collected in the bowl.

In a mixing bowl, mash the roasted tomatoes, garlic, and chilies using a fork or potato masher until they form a coarse mixture.

Add the finely chopped onion, fresh coriander leaves, mustard oil, and salt to the mashed mixture. Mix well to combine all the flavors.
