Ingredients

  • 500 grams chicken breast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves
  • 1 medium onion
  • 3 medium tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 120 milliliters chicken broth
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 3

Add the chicken to the skillet and sauté until browned on all sides and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.

Step 4

Mince the garlic and finely chop the onion.

Step 5

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the garlic and onion until softened and fragrant, about 3-4 minutes.

Step 6

Dice the tomatoes and add them to the skillet. Cook for about 5 minutes, stirring occasionally, until the tomatoes begin to break down and form a chunky sauce.

Step 7

Stir in the dried oregano and dried basil, allowing the flavors to combine.

Step 8

Pour in the chicken broth and bring the mixture to a simmer. Let it simmer for 5 minutes to thicken slightly.

Step 9

Return the cooked chicken to the skillet, stirring to coat it with the tomato sauce. Simmer for an additional 2-3 minutes to ensure the chicken is heated through.

Step 10

Finely chop the fresh parsley and sprinkle it over the dish as a garnish before serving.

Step 11

Serve the Tomato Chicken Saute warm with your choice of rice, pasta, or crusty bread.
