  • 4 large Tomatoes, chopped
  • 4 cups Vegetable broth
  • 2 tablespoons Tomato paste
  • 1 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Heavy cream (optional, for extra creaminess)
  • 0 Croutons or additional basil for garnish

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

Step 4

Add the sliced carrots to the pot and cook for 5 minutes, stirring occasionally, until slightly softened.
