Ingredients

  • 8 medium ripe tomatoes
  • 1 medium yellow onion
  • 3 whole garlic cloves
  • 2 tablespoons olive oil
  • 4 cups vegetable stock or water
  • 1 small bunch fresh parsley
  • 4 sprigs fresh thyme
  • 1 whole bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon sugar (optional)

Directions

Step 1

Wash the tomatoes thoroughly and cut them into quarters. No need to peel or seed them at this stage.

Step 2

Peel the onion and chop it into large chunks. Smash the garlic cloves lightly with the side of a knife to remove the skins.

Step 3

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and lightly golden, about 5 minutes.

Add the quartered tomatoes to the pot and stir, allowing them to begin softening, for 10 minutes.
