Ingredients

  • 56 oz Canned diced tomatoes
  • 3 cups Chicken or vegetable broth
  • 1 medium Carrot, finely chopped
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 cup Fresh basil leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Sugar
  • 1 cup Heavy cream
  • 1 tbsp Olive oil

Directions

Step 1

Prepare your vegetables: chop the carrot and onion finely, and mince the garlic cloves.

Step 2

In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and carrot until softened, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

Transfer the sautéed vegetables to your crockpot.

Add the canned diced tomatoes (including their juice), chicken or vegetable broth, basil leaves, salt, black pepper, and sugar to the crockpot. Stir to combine.
