Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 4 cups Fresh tomatoes (diced)
  • 1 cup Fresh basil leaves (chopped)
  • 4 cloves Garlic cloves (minced)
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Chicken broth (low-sodium)
  • 0.25 cup Parmesan cheese (grated, optional)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Sear the chicken breasts for about 4 minutes on each side, or until golden brown. Remove from the skillet and set aside.

Step 4

Add the remaining tablespoon of olive oil to the skillet along with the minced garlic. Sauté for 1 minute until fragrant.

Step 5

Stir in the diced tomatoes and chicken broth, scraping up any browned bits from the pan with a wooden spoon.

Step 6

Bring the tomato mixture to a simmer, then add the chopped basil, reserving a small handful for garnish.

Step 7

Return the chicken breasts to the skillet, nestling them into the tomato sauce.

Step 8

Cover the skillet and reduce the heat to low. Cook for 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 9

If desired, sprinkle Parmesan cheese over the top and let it melt for an additional minute.

Step 10

Garnish with the reserved basil and serve hot, optionally with pasta, rice, or a side salad.
