Ingredients

  • 6 slices Bacon
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 28 ounces Crushed tomatoes (canned)
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Sugar
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)
  • 1 cup Croutons (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate to drain. Chop the bacon into bite-sized pieces and set aside. Reserve about 1 tablespoon of the bacon fat in the pot.

Step 2

Add the olive oil to the pot with the reserved bacon fat. Heat over medium heat, then add the diced onion. Sauté for 5-7 minutes, stirring occasionally, until the onion is soft and translucent.

Step 3

Add the minced garlic to the pot and cook for 1 minute, stirring constantly, until fragrant.

Step 4

Pour in the crushed tomatoes and chicken broth. Stir to combine, then bring the mixture to a simmer over medium heat.

Step 5

Stir in the sugar, dried basil, salt, and black pepper. Simmer for 15 minutes, uncovered, to allow the flavors to meld.

Step 6

Using an immersion blender, carefully puree the soup until smooth. Alternatively, transfer the soup in batches to a blender, blending until smooth and then returning it to the pot.

Step 7

Lower the heat to medium-low and stir in the heavy cream. Cook for an additional 5 minutes, stirring occasionally, until the soup is heated through.

Step 8

Add the chopped bacon back into the soup and stir to incorporate. Reserve some bacon pieces for garnish, if desired.

Step 9

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 10

Ladle the soup into bowls and garnish with reserved bacon pieces, fresh parsley, and croutons, if using. Serve hot and enjoy!
