Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 14 ounces Canned diced tomatoes
  • 14 ounces Canned artichoke hearts, quartered and drained
  • 0.5 cup Chicken broth
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.25 teaspoon Red pepper flakes
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Sear the chicken breasts in the skillet for 3-4 minutes per side until golden brown. Remove the chicken and set aside; it will continue cooking later.

Step 4

Lower the heat to medium and add the minced garlic to the same skillet. Sauté for 1 minute until fragrant.

Step 5

Stir in the diced tomatoes (with juice), artichoke hearts, chicken broth, dried basil, dried oregano, and red pepper flakes.

Step 6

Bring the mixture to a simmer and return the chicken breasts to the skillet. Spoon some of the sauce over the chicken.

Cover the skillet with a lid and let the chicken cook in the sauce for about 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the chicken and sauce. Let it melt for 1-2 minutes.

Garnish with fresh parsley, if desired, and serve warm.
