Ingredients

  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 1 medium, diced Red bell pepper
  • 800 grams, canned or fresh, diced Tomatoes
  • 500 milliliters Vegetable stock
  • 2 teaspoons Sweet paprika
  • 1 teaspoon Smoked paprika
  • 1 teaspoon (adjust to taste) Salt
  • 0.5 teaspoon (adjust to taste) Black pepper
  • 100 milliliters (optional, for garnish) Heavy cream
  • 2 tablespoons, chopped (for garnish) Fresh parsley

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté for 5-7 minutes, stirring occasionally, until soft and translucent.

Step 3

Stir in the minced garlic and diced red bell pepper. Cook for another 3-4 minutes, until fragrant and slightly softened.

Step 4

Add the diced tomatoes to the saucepan. If using canned tomatoes, include their juices. Stir everything together.

Step 5

Pour in the vegetable stock and bring the mixture to a simmer over medium-high heat.

Step 6

Add the sweet paprika, smoked paprika, salt, and black pepper. Stir well to combine.

Step 7

Reduce the heat to low, cover the saucepan, and let the soup simmer for 20 minutes to allow the flavors to meld.

Step 8

Carefully transfer the soup to a blender or use an immersion blender to blend until smooth. You can leave it slightly chunky if you prefer more texture.

Step 9

Taste the soup and adjust the seasoning with additional salt or pepper if needed.

Step 10

Ladle the soup into bowls and drizzle with heavy cream, if desired. Sprinkle with fresh parsley for garnish.

Step 11

Serve the soup warm with crusty bread or a side salad.
