Ingredients

  • 6 large ripe tomatoes
  • 6 whole garlic cloves
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 8 fresh basil leaves
  • 1 teaspoon sugar
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 cups heavy cream (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the tomatoes into halves and place them cut side up on a baking sheet lined with parchment paper.

Step 3

Peel the garlic cloves and place them on the same baking sheet.

Step 4

Drizzle 1 tablespoon of olive oil over the tomatoes and garlic. Roast in the oven for 25 minutes until the garlic is golden and the tomatoes are slightly caramelized.

While the tomatoes and garlic roast, peel and finely dice the yellow onion.

Step 6

Heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes until softened and translucent.

Remove the roasted tomatoes and garlic from the oven. Carefully transfer them to the pot with the onions.

Add the vegetable broth, tomato paste, fresh basil leaves, sugar, salt, and black pepper to the pot. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes, allowing the flavors to meld.
