Ingredients

  • 150 g chorizo sausage
  • 4 medium ripe tomatoes
  • 1 small red onion
  • 2 cloves garlic cloves
  • 3 tablespoons, chopped fresh cilantro
  • 1 whole lime
  • 1 small jalapeño
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a non-stick skillet over medium heat. Remove the casing from the chorizo sausage and crumble the meat into the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy. Remove from heat and drain excess grease if necessary. Set aside to cool.

Step 2

While the chorizo cools, dice the tomatoes into small chunks and transfer them to a medium mixing bowl.

Step 3

Finely chop the red onion and add it to the bowl with the tomatoes.

Mince the garlic cloves and jalapeño (remove the seeds from the jalapeño for a milder salsa), then stir them into the tomato mixture.

Add the cooked chorizo to the bowl along with the chopped cilantro, smoked paprika, salt, and black pepper.

Cut the lime in half and squeeze its juice over the mixture. Drizzle with olive oil.
