Ingredients

  • 250 grams Gruyère cheese
  • 250 grams Emmental cheese
  • 3 medium-sized Tomatoes
  • 250 milliliters Dry white wine
  • 1 clove Garlic
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 loaf French bread

Directions

Step 1

Grate the Gruyère and Emmental cheeses, and set them aside in a bowl.

Step 2

Blanch the tomatoes in boiling water for 1 minute, then transfer them to an ice bath. Peel, seed, and finely chop the tomatoes.

Step 3

Peel the garlic clove and rub the inside of a fondue pot (or a heavy-bottomed saucepan) with it. Discard the garlic or mince it finely to use later for added flavor.

Step 4

In the fondue pot, add the dry white wine and lemon juice, then heat over medium heat until warm but not boiling.

Step 5

Gradually add the grated cheese to the pot, stirring constantly with a wooden spoon in a figure-eight motion to ensure smooth melting.

Step 6

In a small bowl, dissolve the cornstarch in 2 tablespoons of cold water to make a slurry, then stir it into the melted cheese mixture to thicken.

Step 7

Stir in the chopped tomatoes, black pepper, and nutmeg. Mix well and simmer for 2-3 minutes to blend the flavors, ensuring the fondue stays smooth and creamy.

Step 8

Cut the French bread into bite-sized cubes for dipping.

Step 9

Place the fondue pot on a low-heat burner or a fondue stand to keep it warm. Serve immediately with the bread cubes for dipping.
