  • 800 grams Ripe tomatoes
  • 3 tablespoons Extra virgin olive oil
  • 2 units Garlic cloves
  • 1 teaspoons Salt
  • 1 teaspoons Sugar (optional)
  • 10 units Fresh basil leaves
  • 0.25 teaspoons Black pepper

Directions

Step 1

Start by blanching the tomatoes to remove their skins. Bring a pot of water to a boil, score the bottom of each tomato with a small 'X', and immerse them in the boiling water for 30 seconds. Then transfer them to a bowl of ice water to cool. Peel off the skins and roughly chop the tomatoes.

Step 2

Heat the extra virgin olive oil in a large saucepan over medium heat.

Step 3

Crush the garlic cloves with the flat side of a knife and add them to the hot oil. Cook for 1-2 minutes until fragrant, but do not allow them to brown.
