Ingredients

  • 4 Large ripe tomatoes
  • 4 Eggs
  • 4 tablespoons Mayonnaise
  • 1 tablespoon Fresh parsley, finely chopped
  • 1 tablespoon Fresh chives, finely chopped
  • 1 teaspoon Lemon juice
  • 1 teaspoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the tomatoes and set them aside. Use a small spoon to gently scoop out the seeds and pulp, leaving the tomato shells intact. Lightly brush the insides of the tomatoes with olive oil and sprinkle with a pinch of salt. Set the tomatoes on a baking dish.

Step 3

Crack an egg into each hollowed-out tomato, being careful not to break the yolk. Sprinkle the eggs lightly with salt and black pepper.

Place the baking dish with the tomatoes into the preheated oven. Bake for 12-15 minutes, or until the whites are set and the yolks are still slightly runny (or cooked to your preference).
