Ingredients

  • 4 cups water or chicken stock
  • 2 lemongrass stalks
  • 4 kaffir lime leaves
  • 1 inch galangal (sliced)
  • 3 bird's eye chilies (crushed)
  • 3 shallots (halved)
  • 1 cup straw mushrooms (halved)
  • 12 large shrimp (peeled and deveined)
  • 3 tablespoons fish sauce
  • 4 tablespoons lime juice
  • 1 tablespoon Thai chili paste (nam prik pao)
  • 1 tablespoon fresh cilantro (chopped)
  • 1 teaspoon sugar
  • 2 medium tomatoes (quartered)

Directions

Step 1

Start by preparing the aromatics. Lightly bruise the lemongrass stalks and cut them into 2-inch pieces. Tear the kaffir lime leaves into halves for better flavor release.

Step 2

In a medium-sized pot, bring the water or chicken stock to a boil over medium heat.

Step 3

Add the prepared lemongrass, kaffir lime leaves, sliced galangal, crushed bird's eye chilies, and halved shallots to the boiling stock. Let these simmer for about 5 minutes to release their flavors.

Step 4

Reduce the heat to medium and add the straw mushrooms and tomatoes. Let them cook for another 4-5 minutes until tender.

Step 5

Add the shrimp to the pot and cook for 2-3 minutes, or until they turn pink and are just cooked through.

Step 6

Stir in the fish sauce, lime juice, sugar, and Thai chili paste (nam prik pao). Taste the soup and adjust the seasoning as necessary, balancing the salty, sour, spicy, and sweet flavors to your liking.

Step 7

Turn off the heat and sprinkle the chopped fresh cilantro over the soup.

Step 8

Ladle the hot soup into bowls and serve immediately. Enjoy this flavorful and aromatic Tom Yum soup!
