  • 1 lb shrimp (peeled and deveined)
  • 1 cup straw mushrooms (halved)
  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 2 tablespoons Tom Yum paste
  • 0.5 cup fresh cilantro
  • 3 pieces green onions

Directions

Step 1

Begin by preparing the lemongrass. Cut off the tough ends and bruise the stalks to release their flavor, then slice them into 2-inch pieces.

In a large pot, bring the water to a boil over medium-high heat.

Add the sliced lemongrass, galangal slices, torn kaffir lime leaves, and whole Thai bird's eye chilies to the boiling water. Let them boil for about 5 minutes to infuse the water with their flavors.
