Ingredients

  • 300 grams Prawns (large, deveined, with shells and heads reserved)
  • 3 Lemongrass stalks (bruised and cut into 2-inch pieces)
  • 5 Kaffir lime leaves (torn into pieces)
  • 5 slices Galangal (sliced)
  • 4 Bird's eye chilies (crushed)
  • 3 Shallots (sliced)
  • 4 cups Water
  • 2 Tomatoes (quartered)
  • 150 grams Mushrooms (sliced)
  • 3 tablespoons Fish sauce
  • 1 tablespoon Tamarind paste
  • 3 tablespoons Lime juice (freshly squeezed)
  • 1 teaspoon Sugar
  • 2 tablespoons Cilantro leaves (for garnish)

Directions

Step 1

Remove the shells and heads from the prawns, but keep them reserved to make a flavorful broth.

Step 2

In a medium pot, bring the water to a boil and add the prawn shells and heads. Simmer for 10 minutes, then strain the broth into a clean pot. Discard the shells and heads.

Step 3

Add the lemongrass, kaffir lime leaves, galangal, bird's eye chilies, and sliced shallots to the pot with the strained broth. Simmer for 5 minutes to infuse the flavors.
