  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup Vegetable broth
  • 0.5 cup Gluten-free breadcrumbs
  • 1 cup Stuffing of choice (optional; ensure it is gluten-free and vegan)

Directions

Step 1

Press the tofu to remove as much moisture as possible. Wrap the tofu in a clean kitchen towel, place a heavy object on top, and let it sit for at least 15-20 minutes.

Step 2

Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.

Step 3

Break the pressed tofu into large chunks and place in a food processor. Pulse until it reaches a smooth and uniform texture, similar to a thick paste.

Transfer the tofu paste to a large mixing bowl. Add nutritional yeast, tamari, olive oil, garlic powder, onion powder, dried sage, dried thyme, ground black pepper, and vegetable broth. Mix well until fully incorporated.

Wrap the parchment paper tightly around the tofu loaf, twisting the ends to seal. Place the wrapped loaf in the greased baking dish.

Bake in the preheated oven for 60 minutes. Remove the baking dish from the oven, unwrap the tofu roast, and return it to the oven uncovered to bake for an additional 30 minutes, or until the top is golden brown and slightly firm to the touch.
