  • 300 grams Frozen spinach
  • 400 grams Firm tofu
  • 1 piece Pie crust (store-bought or homemade)
  • 1 medium Onion
  • 2 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 3 tablespoons Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Flour (optional, for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Thaw the frozen spinach by microwaving it for a few minutes or by placing it in a colander under warm water. Squeeze out excess water and set aside.

Chop the onion and mince the garlic.

In a skillet, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 3-4 minutes. Add the garlic and cook for an additional minute.
