Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 cup Warm water
  • 2 tablespoons Olive oil
  • 14 ounces Firm tofu
  • 4 cups Fresh spinach
  • 3 cloves Garlic
  • 3 tablespoons Nutritional yeast (optional for vegan version)
  • 0.5 teaspoon Salt (for filling)
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup Vegan mozzarella cheese or regular mozzarella (for vegetarian)
  • 0 As needed All-purpose flour (for dusting)
  • 0 As needed Olive oil (for brushing)

Directions

Step 1

In a large mixing bowl, combine the flour, yeast, sugar, and salt for the dough.

Step 2

Add the warm water and olive oil to the dry ingredients, and mix until a dough forms.

Step 3

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover with a damp kitchen towel, and let it rise for 1 hour or until it doubles in size.

Step 5

While the dough is rising, prepare the filling: Drain and crumble the tofu into a large mixing bowl.

Step 6

Wash and roughly chop the spinach. Heat a skillet over medium heat and sauté the spinach and minced garlic until the spinach is wilted.

Step 7

Add the sautéed spinach, nutritional yeast (if using), salt, pepper, and Italian seasoning to the crumbled tofu. Mix well.

Step 8

Stir in the vegan mozzarella cheese (or regular mozzarella for vegetarian) until evenly distributed.

Step 9

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 10

After the dough has risen, punch it down and divide it into 6 equal portions.

Step 11

Roll out each portion into a circle, about 6-8 inches in diameter, on a floured surface.

Step 12

Spoon an even amount of the filling onto one half of each circle, leaving about 1/2-inch of space around the edge.

Step 13

Fold the dough over the filling to create a half-moon shape, and pinch the edges firmly to seal. Crimp with a fork if desired.

Step 14

Place the calzones on the prepared baking sheet. Brush the tops with olive oil.

Step 15

Bake the calzones in the preheated oven for 20-25 minutes or until golden brown.

Step 16

Let them cool for a few minutes before serving. Enjoy!
