Ingredients

  • 16 ounces Tofu shirataki fettuccini noodles
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Cream cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Nutmeg (optional)
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Rinse the tofu shirataki fettuccini noodles under cool running water for 1-2 minutes. Drain well and pat them dry with paper towels to remove excess moisture.

Step 2

In a large nonstick skillet, dry fry the noodles over medium heat for 3-5 minutes, stirring occasionally, to remove any remaining water and reduce their natural odor. Set the noodles aside.

Mince the garlic cloves finely.
