Ingredients

  • 16 ounces firm tofu
  • 2 cups fresh cherries (pitted)
  • 0.5 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 medium bell peppers (red, yellow, or green, cut into chunks)
  • 1 medium red onion (cut into chunks)
  • 1 large zucchini (cut into chunks)
  • 10 wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Press the tofu to remove excess water by placing it between two plates with a weight on top for 15 minutes. Then cut it into 1.5-inch cubes.

Step 2

Prepare the cherry barbecue sauce by combining the cherries, ketchup, apple cider vinegar, brown sugar, soy sauce, smoked paprika, and garlic powder in a medium saucepan. Bring to a simmer over medium heat and cook for 15 minutes, stirring occasionally.

Step 3

Let the barbecue sauce cool slightly, then puree it in a blender or food processor until smooth. Set aside.

Step 4

In a large bowl, toss the tofu cubes, bell peppers, red onion, and zucchini with olive oil and a pinch of salt and pepper.

Step 5

Thread the tofu and vegetables onto the soaked wooden skewers, alternating pieces for a colorful pattern.

Step 6

Preheat your grill or grill pan to medium heat. Lightly oil the grates to prevent sticking.

Step 7

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally to ensure even cooking. Brush generously with the cherry barbecue sauce during the last 5 minutes of cooking.

Step 8

Remove the kabobs from the grill and brush with additional barbecue sauce, if desired. Serve warm with any remaining sauce on the side.
