Ingredients

  • 14 ounces extra-firm tofu
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion (chopped)
  • 1 cup frozen peas and carrots
  • 2 stalks green onions (chopped)
  • 3 cloves garlic (minced)
  • 3 cups cooked rice (preferably jasmine or basmati)
  • 1 egg (beaten)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sriracha or other hot sauce (optional)

Directions

Step 1

Press the tofu to remove excess moisture by wrapping it in a clean towel and placing a weight on top for about 10 minutes.

Step 2

Cut the tofu into small cubes and marinate them in 2 tablespoons of soy sauce for at least 10 minutes to enrich the flavor.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and fry until golden brown on all sides, approximately 8-10 minutes. Once done, remove and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the chopped onion and sauté until softened, about 3-4 minutes.

Step 5

Add the minced garlic and cook for another 30 seconds, stirring frequently until fragrant.

Step 6

Stir in the frozen peas and carrots, and continue cooking until they are tender, around 3-5 minutes.

Step 7

Add the cooked rice, breaking up any clumps and stirring to combine with the vegetables.

Push the rice and vegetable mixture to one side of the skillet and pour the beaten egg on the other side. Scramble the egg until fully cooked, then mix it into the rice.

Step 9

Return the fried tofu to the pan and add the remaining 1 tablespoon of soy sauce, sesame oil, salt, and black pepper. Stir everything together until well-combined and heated through.

Garnish with chopped green onions and a drizzle of sriracha, if desired.
