Ingredients

  • 300 g All-purpose flour
  • 2 tsp Ground cinnamon
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 150 g Unsalted butter, softened
  • 150 g Granulated sugar
  • 100 g Brown sugar
  • 2 large Eggs
  • 1.5 tsp Vanilla extract
  • 3 medium Apples (peeled, cored, and diced)
  • 120 ml Whole milk
  • 150 ml Toffee sauce
  • 250 ml Heavy cream
  • 50 g Powdered sugar
  • 50 g Crushed toffee pieces (optional for topping)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake tin with parchment paper.

Step 2

In a mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. Set aside.

Step 3

In another large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes using an electric mixer.

Step 4

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

Step 5

Gradually fold in the dry ingredient mixture, alternating with the milk, beginning and ending with the dry ingredients.

Step 6

Gently fold in the diced apples until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared cake tin and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

In a separate bowl, whip the heavy cream and powdered sugar together until thick and soft peaks form.

Step 11

Once the cake is cool, drizzle the top with toffee sauce, spreading it evenly with a spoon or spatula.

Step 12

Spread or pipe the whipped cream over the toffee sauce, and sprinkle with crushed toffee pieces if desired.

Step 13

Slice and serve! Enjoy this Toffee Apple Cake as a dessert or with a warm cup of tea or coffee.
