Ingredients

  • 3 apples (preferably Granny Smith or Honeycrisp)
  • 60 grams unsalted butter
  • 100 grams brown sugar
  • 120 milliliters heavy cream
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 200 grams day-old brioche bread
  • 2 eggs
  • 250 milliliters milk
  • 0.25 teaspoons salt
  • 1 tablespoon powdered sugar (optional, for garnish)
  • 2 tablespoons chopped pecans (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a medium-sized baking dish with butter or non-stick spray.

Step 2

Peel, core, and slice the apples into thin wedges.

Step 3

In a skillet, melt 30 grams of unsalted butter over medium heat. Add the sliced apples, ground cinnamon, and 50 grams of brown sugar. Sauté for 5-7 minutes until the apples are tender and caramelized. Set aside.

Step 4

In a saucepan, melt the remaining 30 grams of butter over medium heat. Stir in the remaining 50 grams of brown sugar and cook until dissolved. Slowly pour in the heavy cream while stirring continuously. Simmer for 3-4 minutes, then remove from heat and stir in the vanilla extract to make the toffee sauce.

Cut the brioche bread into 2cm cubes and arrange half of it in the bottom of the greased baking dish.

Step 6

Layer the caramelized apples over the bread cubes and pour half of the toffee sauce on top. Add the remaining bread cubes as the final layer.

In a bowl, whisk together the eggs, milk, and salt until well combined. Pour this custard mixture evenly over the layered bread and apples. Let it sit for 5-10 minutes to allow the bread to soak up the liquid.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake uncovered for an additional 15 minutes until the top is golden and slightly crisp.

Step 9

Remove the pudding from the oven and let it cool for 5 minutes. Drizzle the remaining toffee sauce over the top.

Step 10

Optional: Garnish with a dusting of powdered sugar and chopped pecans before serving. Serve warm and enjoy!
