Ingredients

  • 1 cup Risoni (orzo pasta)
  • 1 small can (approx. 5 oz) Canned tuna (in water), drained
  • 1 medium Carrot, finely grated
  • 1 medium Zucchini, finely grated
  • 0.5 cup Frozen peas
  • 0.5 cup Cheddar cheese, shredded
  • 1 tablespoon Unsalted butter
  • 0.5 cup Milk
  • 0.25 teaspoon Garlic powder
  • 0.125 teaspoon Salt (optional, for toddlers 12+ months)
  • 1 tablespoon Fresh parsley, finely chopped (optional garnish)

Directions

Step 1

Cook the risoni according to the package instructions in lightly salted water, if using. This should take about 8-10 minutes. Drain and set aside.

Step 2

While the risoni cooks, prepare the vegetables. Grate the carrot and zucchini finely, ensuring the pieces are small enough for toddler-friendly bites.

Step 3

In a large pan, melt the unsalted butter over medium heat.

Step 4

Add the grated carrot, zucchini, and frozen peas to the pan. Sauté for 3-4 minutes, stirring occasionally, until the vegetables are softened.

Step 5

Stir in the garlic powder and a pinch of salt, if using. Mix well.

Step 6

Add the drained tuna to the pan, breaking it into small pieces with a spoon. Stir to combine with the vegetables.

Step 7

Reduce the heat to low and stir in the cooked risoni.

Step 8

Slowly add the milk and shredded cheddar cheese, stirring continuously until the cheese melts and forms a creamy sauce that coats the pasta and vegetables evenly.

Step 9

Remove from heat. If desired, garnish with a sprinkle of parsley for added freshness and serve warm.

Step 10

Allow to cool slightly before serving to toddlers to ensure it’s at a safe temperature.
