Ingredients

  • 2 pounds Russet potatoes
  • 2 medium Vidalia onions
  • 6 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves (minced)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper (freshly ground)
  • 2 tablespoons Chives (optional, chopped for garnish)

Directions

Step 1

Peel and dice the Russet potatoes into 1-inch cubes, then place them in a large pot filled with cold water. Add a pinch of salt to the water.

Step 2

Bring the pot of water to a boil over medium-high heat. Cook the potatoes until they're fork-tender, about 15-20 minutes. Drain and set aside.

Step 3

While the potatoes cook, peel and thinly slice the Vidalia onions.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced Vidalia onions and cook, stirring occasionally, for 10-12 minutes or until they are golden brown and caramelized. Add the minced garlic in the last 2 minutes of cooking and stir until fragrant. Remove from heat.

In the same pot used to boil the potatoes, melt 6 tablespoons of butter over low heat.
