Ingredients

  • 4 slices White or whole-grain sandwich bread
  • 4 slices Sharp cheddar cheese
  • 1 medium Red or yellow onion
  • 1 tablespoon Olive oil
  • 2 tablespoons Unsalted butter (softened)
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Peel and thinly slice the onion into rings.

Step 2

Heat a skillet over medium heat and add olive oil. Once hot, add the sliced onions.

Step 3

Season the onions with salt, black pepper, and thyme (if using), and cook for 7-10 minutes, stirring frequently, until they are soft and caramelized. Remove from heat and set aside.

Step 4

Spread a thin, even layer of softened butter on one side of each bread slice.

Step 5

Place two slices of bread, buttered side down, on a clean surface. Layer each with 2 slices of sharp cheddar cheese and half of the caramelized onions. Top with the remaining slices of bread, buttered side up.

Step 6

Heat a clean skillet or griddle pan over medium-low heat.

Step 7

Carefully place the sandwiches in the skillet and cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crisp and the cheese is fully melted.

Step 8

Remove the sandwiches from the skillet, let cool slightly, and cut in halves or quarters before serving.
