Ingredients

  • 120 grams Cream cheese, softened
  • 1 Apple (medium, peeled, and finely diced)
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Ground cinnamon
  • 8 slices White or whole wheat sandwich bread
  • 3 tablespoons Unsalted butter, melted
  • 2 teaspoons Powdered sugar (optional, for dusting)

Directions

Step 1

In a small mixing bowl, combine the softened cream cheese, granulated sugar, and ground cinnamon. Mix until smooth and well combined.

Step 2

In a skillet over medium heat, add the diced apple and 1 tablespoon of water. Cook for about 3-4 minutes, stirring occasionally, until the apple softens slightly. Remove from heat and allow to cool for a minute.

Step 3

Flatten each slice of bread using a rolling pin until it’s thin but still holds its shape. Trim the crusts off each slice.

Step 4

Spread a thin layer of the cream cheese mixture onto each slice of bread, leaving about 0.5 cm (1/4 inch) of space along the edges.

Step 5

Spoon a small amount of the cooked apple onto one side of each slice (about 1 tablespoon per slice). Fold the bread in half to create a pocket, pressing the edges together firmly to seal. If needed, use a fork to crimp the edges for a tighter seal.

Step 6

Brush the melted butter over both sides of each pocket.

Step 7

Heat a non-stick skillet or griddle over medium heat. Toast the pockets for 2-3 minutes on each side, or until golden brown and crispy.

Step 8

Remove the pockets from the pan and allow them to cool for 2 minutes. Dust with powdered sugar, if desired, before serving.

Step 9

Serve warm and enjoy!
