Ingredients

  • 4 pieces large flour tortillas
  • 6 pieces eggs
  • 2 tablespoons milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 8 pieces bacon strips
  • 1 cup shredded cheddar cheese
  • 0.5 cup salsa
  • 1 cup fresh spinach leaves
  • 1 tablespoon butter
  • 1 teaspoon oil

Directions

Step 1

In a large skillet over medium heat, cook the bacon strips until crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess grease. Once cooled, crumble the bacon into bite-sized pieces.

Step 2

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Wipe the skillet clean and add 1 teaspoon of oil. Pour in the whisked egg mixture and cook over medium-low heat, stirring gently, until the eggs are soft and scrambled. Remove from heat and set aside.
