Ingredients

  • 150 grams Plain flour
  • 3 large Eggs
  • 300 ml Whole milk
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 1 large Red onion
  • 1 tablespoon Olive oil
  • 6 large Pork sausages
  • 2 tablespoons Vegetable oil

Directions

Step 1

Preheat your oven to 220°C (200°C fan) or 425°F.

Step 2

In a large bowl, whisk together the plain flour, eggs, whole milk, salt, and fresh thyme leaves until the batter is smooth and lump-free. Let the batter rest at room temperature for at least 15 minutes.

Step 3

Peel and thinly slice the red onion. Heat the olive oil in a pan over medium heat and sauté the onion slices until softened and slightly caramelized, about 5 minutes. Remove from heat and set aside.

Step 4

Place the sausages in a large ovenproof dish and drizzle them with the vegetable oil. Place the dish in the preheated oven and roast the sausages for 10 minutes, turning them halfway through, so they begin to brown.

Carefully remove the dish from the oven and scatter the caramelized red onions around the sausages. Immediately pour the prepared batter evenly over the sausages and onions.

Once done, remove the dish from the oven and allow it to rest for 2-3 minutes before serving. Serve hot with your favorite gravy or a side of steamed vegetables.
