Ingredients

  • 8 pieces pork sausages
  • 120 grams all-purpose flour
  • 2 large eggs
  • 300 milliliters whole milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons vegetable oil or beef dripping
  • 1 sprig fresh rosemary (optional)

Directions

Step 1

Preheat your oven to 220°C (200°C fan)/425°F/Gas Mark 7.

Place the sausages in a large ovenproof dish or roasting tin and drizzle with 1 tablespoon of vegetable oil. Scatter fresh rosemary on top, if using.

Bake the sausages in the preheated oven for 10 minutes until lightly browned.

Return the dish to the hot oven and bake for 20-25 minutes, or until the batter is puffed and golden brown. Do not open the oven during this time as it may cause the batter to collapse.

Remove from the oven and let rest for 2-3 minutes before serving.
