Ingredients

  • 3 pieces ripe plantains
  • 100 grams all-purpose flour

  • 1 teaspoon ground ginger
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 large egg
  • 500 milliliters (for frying) vegetable oil
  • 50 milliliters water

Directions

Step 1

Peel the ripe plantains and place them in a large mixing bowl.

Step 2

Mash the plantains with a fork or potato masher until smooth. A few small chunks are fine for texture.

Step 3

Add the finely chopped onion, chopped chili pepper, ground ginger, nutmeg, salt, and black pepper to the mashed plantains. Mix well until evenly combined.

In a separate bowl, beat the egg and add it to the plantain mixture. Stir until fully incorporated.

Gradually add the flour to the mixture, stirring continuously to form a thick batter.
