Ingredients

  • 180 grams Whole wheat flour
  • 60 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1.5 teaspoons Freshly ground black pepper
  • 85 grams Unsalted butter, cold and cubed
  • 30 grams Grated Parmesan cheese (optional)
  • 120 milliliters Cold buttermilk
  • 1 Egg, lightly beaten (for egg wash)
  • 0.25 teaspoons Additional freshly ground black pepper (for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, salt, and black pepper.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the mixture until it resembles coarse crumbs.

Step 4

If using Parmesan cheese, fold it into the mixture at this stage.

Step 5

Make a well in the center and gradually pour in the cold buttermilk. Stir gently with a fork until the dough just comes together. Avoid overmixing.
