  • 1 kg chicken pieces (preferably legs and thighs)
  • 1 medium green papaya, peeled and cut into wedges

  • 4 pieces garlic cloves, minced
  • 3 tablespoons fish sauce
  • 1.5 liters water
  • 500 ml chicken broth (optional)
  • 2 tablespoons oil (vegetable or canola)
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Directions

Step 1

Heat the oil in a large pot over medium heat.

Add the onions, garlic, and ginger. Sauté until the onions are translucent and the ginger is fragrant, about 3-5 minutes.

Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
