Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion (diced)
  • 3 Garlic cloves (minced)
  • 2 Chipotle peppers in adobo sauce (chopped)
  • 1 teaspoon Cumin powder
  • 2 teaspoons Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 Flour tortillas (8-10 inches)
  • 2.5 cups Enchilada sauce
  • 2 cups Shredded Mexican blend cheese
  • 1 tablespoon Vegetable oil
  • 0.25 cup Fresh cilantro (chopped)
  • 0.5 cup Sour cream (optional, for serving)
  • 4 Lime wedges (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

Step 2

In a large skillet, heat the vegetable oil over medium heat. Add the diced onions and cook until they are soft and translucent, about 5 minutes.

Step 3

Add the garlic to the skillet and sauté for 1 minute, until fragrant.

Step 4

Add the ground beef. Cook until the beef is browned and fully cooked through, breaking it into smaller crumbles with a wooden spoon, about 6-8 minutes.

Step 5

Stir in the chipotle peppers, cumin powder, chili powder, salt, and black pepper. Mix until everything is well incorporated. Remove the skillet from heat.

Step 6

Spread 1/2 cup of the enchilada sauce across the bottom of the prepared baking dish.

Step 7

Lay out a tortilla on a clean surface. Spoon 1/4 cup of the beef mixture down the center of the tortilla and sprinkle with 2 tablespoons of shredded cheese. Roll the tortilla tightly, seam side down, and place it in the baking dish. Repeat with the remaining tortillas, beef mixture, and cheese.

Step 8

Pour the remaining enchilada sauce evenly over the rolled tortillas, ensuring each is well coated. Sprinkle the remaining cheese over the top.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Step 10

Remove from the oven and let cool for 5 minutes. Garnish with fresh cilantro.

Step 11

Serve hot with optional sour cream and lime wedges on the side for an extra burst of flavor.
