Ingredients

  • 300 g Digestive biscuits (or graham crackers)
  • 150 g Unsalted butter
  • 4 tbsp Golden syrup (or light corn syrup)
  • 2 tbsp Cocoa powder
  • 100 g Dark or milk chocolate (for base mixture)
  • 100 g Raisins or dried cherries
  • 50 g Chopped nuts (e.g., walnuts, hazelnuts, or almonds)
  • 200 g Dark chocolate (for topping)
  • 50 g White chocolate (optional, for decoration)

Directions

Step 1

Line an 8-inch (20 cm) square baking tin with parchment paper, leaving some overhang for easy removal later.

Step 2

Place the digestive biscuits in a sealed plastic bag and crush them into small chunks using a rolling pin. Avoid making them too fine as you want some texture. Set aside.

Step 3

In a medium saucepan, melt the butter, golden syrup, and cocoa powder over low heat, stirring constantly. Once combined, add the 100g of dark or milk chocolate and stir until melted and smooth. Remove the saucepan from the heat.

Stir the crushed biscuits, raisins, and chopped nuts into the chocolate mixture, ensuring everything is well coated.

Transfer the mixture into the prepared baking tin and press it down firmly with the back of a spoon or spatula to create an even layer.

Melt the 200g of dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method) or in short bursts in the microwave. Pour the melted chocolate evenly over the biscuit base, spreading it with a spatula.
