Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 packet taco seasoning blend
  • 1 14.5 oz can canned diced tomatoes (fire-roasted preferred)
  • 1 15 oz can canned black beans, drained and rinsed
  • 1 15 oz can canned kidney beans, drained and rinsed
  • 1 15 oz can canned corn, drained
  • 2 tbsp tomato paste
  • 4 cups beef broth (or chicken broth, if using turkey)
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp lime juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups tortilla chips
  • 1 cup shredded cheddar cheese (for topping)
  • 0.5 cup sour cream (for topping)
  • 0.25 cup sliced jalapeños (optional, for topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the ground beef (or turkey) and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess fat if necessary.

Step 2

Add the diced onion and sauté with the meat until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 3

Sprinkle in the taco seasoning and stir well to coat the beef and onion mixture evenly.

Step 4

Add the canned diced tomatoes, black beans, kidney beans, corn, and tomato paste to the pot. Stir to combine all the ingredients.

Step 5

Pour in the beef broth and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let the soup simmer for about 15 minutes, stirring occasionally.

Step 6

Stir in the chopped cilantro, lime juice, salt, and black pepper. Taste and adjust seasonings if needed.

Step 7

To serve, ladle the soup into bowls. Garnish each bowl with a handful of crushed tortilla chips, shredded cheddar cheese, a dollop of sour cream, and sliced jalapeños if desired.

Step 8

Serve hot and enjoy your delicious Tic Tac Taco Soup 147!
