Ingredients

  • 300 g Seitan
  • 2 tbsp Sesame oil
  • 1 tbsp Ginger, minced
  • 2 cloves Garlic, minced
  • 3 tbsp Soy sauce
  • 2 tbsp Hoisin sauce
  • 2 cups Cabbage, shredded
  • 1 large Carrot, julienned
  • 3 Scallions, chopped
  • 0.5 cup Cilantro, roughly chopped
  • 4 Tortillas, large
  • 0 Tibetan-inspired sauce (see instructions for ingredients)
  • 1 tsp Chili paste (optional)

Directions

Step 1

Heat 1 tablespoon of sesame oil in a large skillet over medium heat.

Step 2

Add the minced ginger and garlic, stirring frequently for 1-2 minutes until fragrant.

Step 3

Add the seitan to the skillet and stir-fry for 3-4 minutes until lightly browned.

Step 4

Stir in soy sauce, hoisin sauce, and chili paste (if using). Cook for an additional 2-3 minutes, ensuring the seitan is well coated in the sauce. Remove from heat and set aside.

Step 5

In a separate skillet or wok, heat the remaining sesame oil over medium-high heat.

Step 6

Add shredded cabbage and julienned carrot. Stir-fry for 2-3 minutes until slightly softened but still crisp. Remove from heat.

Step 7

Prepare the Tibetan-inspired sauce by mixing 1/2 cup plain vegan yogurt, 1 tablespoon tahini, 1 tablespoon lime juice, and a pinch of salt in a small bowl. Adjust the seasoning to taste.

Step 8

Warm the tortillas in a dry skillet or directly over the stove flame for a few seconds on each side until pliable.

Step 9

To assemble the burritos, spread a generous spoonful of the Tibetan-inspired sauce down the center of each tortilla.

Step 10

Layer with the cooked seitan, stir-fried vegetables, a sprinkle of chopped scallions, and cilantro.

Step 11

Roll the tortilla tightly, tucking in the sides as you roll, to create a sealed burrito.

Step 12

Serve immediately, or wrap in foil to keep warm for later. These burritos pair well with a side of steamed dumplings or a light green salad.
