Ingredients

  • 3 pounds pork shoulder roast
  • 1.5 pounds baby potatoes
  • 4 whole carrots
  • 1 large yellow onion
  • 4 cloves garlic cloves
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Begin by preparing the vegetables. Wash and halve the baby potatoes. Peel and chop the carrots into large chunks. Peel and slice the onion into wedges. Peel the garlic cloves and leave them whole.

Step 2

Heat a skillet over medium-high heat and add the olive oil. Sear the pork shoulder roast on all sides until a golden-brown crust forms, about 2-3 minutes per side. Remove from heat.

Step 3

In the crockpot, layer the baby potatoes, carrots, onion, and garlic cloves at the bottom to create a vegetable base.

Step 4

Place the seared pork roast on top of the vegetables.

Step 5

In a small bowl, mix together the dried thyme, dried rosemary, paprika, salt, and black pepper. Sprinkle this seasoning mix evenly over the pork roast and vegetables.

Step 6

Pour the chicken broth into the crockpot around the sides of the roast, making sure not to wash away the seasoning on the meat.

Step 7

Cover the crockpot with the lid and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily pulls apart with a fork.

Step 8

Once cooked, remove the pork roast and shred or slice as desired.

Step 9

Serve the pork alongside the vegetables, drizzling some of the flavorful juices from the crockpot over the top. Enjoy your meal!
